There are two essential tips to getting the best possible experience

from real wasabi paste:  it has to be made fresh, and it must be grated

to just the right texture.

 

 

The importance of correct grating can’t be overestimated. The prized

flavour of wasabi is created by ‘tearing apart’ the individual wasabi

cells and mixing the ingredients within. This sets off a chemical reaction

much like epoxy glue - when the chemicals are not mixed, there’s no

flavour, but when the wasabi is ground and mixed properly, WOW!

 

 

To achieve just the right texture, a very fine grater is needed. Utensils such as cheese or nutmeg graters just don’t do the job properly as they are too coarse and ‘slice’ rather than ‘grind and mix’.

 

 

Typically the Japanese use a sharkskin grater (samegawa oroshi) as the texture of the sharkskin grates the wasabi to a smooth paste. The wasabi is held at 45degrees to the surface and grated in a circular motion as this achieves a good balance of grinding and mixing.

 

 

We’ve had many requests for authentic sharkskin graters, however importing them is difficult and extremely expensive.  So, in typical Shima style we’ve decided to make our own!

These wooden graters are hand-made from Tasmanian hardwood and finished with food-grade vegetable oil.

 

They featuring a high-quality synthetic abrasive, carefully selected to produce just the right texture for a smooth and flavoursome wasabi paste. (No sharks were harmed in their making!)

 

Two sizes are available:

 

- small: 155 x 85mm (grating surface approx. 80 x 75mm), $39 inc GST.

 

- large: 300 x 160mm (grating surface approx. 150 x 150mm), $89 inc GST.
