Famed chef Tetsuya Wakuda first introduced us to the sensational combination of fresh wasabi with wagyu.  It’s an inspired combination that simply must be tried by every serious food lover.  Here’s just one way to indulge.      

 

 

Ingredients    

  4 prime wagyu fillets, around 400g each

  1 small daikon radish

  1 large cucumber

  2 tsp freshly grated wasabi

  2 tsp finely grated ginger 

  2 vanilla pods

  2 tbsp vegetable oil 
  200g sugar 
  Juice of 4 limes 
  100ml dark soy sauce 
  Salt and freshly ground black pepper 

 

Put the lime juice, sugar and vanilla pods into a small saucepan and stir, heating gently until the sugar is dissolved.  Remove from the heat and leave to cool.

 

Peel the cucumber and quarter it lengthways then chop into small cubes and put in a mixing bowl. Pour over the lime and vanilla mixture, mix well and leave to marinate for a few minutes.

 

Mix the grated ginger and soy sauce together, then whisk in the grated wasabi. Place this sauce, the marinated cucumber and grated daikon in separate serving bowls.

 

Rub the oil over the wagyu fillets and season with salt and pepper to taste.  Heat the oil in a heavy pan and when the pan is very hot, add the wagyu, searing each side for around 2 minutes for rare, or longer for well done. Once cooked, transfer the wagyu to a warm plate and allow to rest for several minutes.  

 

Slice the wagyu into wafer-thin pieces and arrange on a serving plate accompanied by the wasabi sauce, marinated cucumber and daikon, so your guests can mix and match the accompaniments to their taste.
